Blueberry Chia Jam

Ingredients

15.9 oz (450 g) blueberries
2 tbsp (30 ml) maple syrup
1 tbsp (15 ml) fresh lemon juice
½ tsp (2.5 ml) vanilla extract
½ tsp (1.5 g) ground cinnamon
3 tbsp (30 g) chia seeds

Instructions

  • In medium saucepan over medium heat, simmer blueberries, lemon juice, and vanilla for 3 to 5 minutes, mashing gently and stirring often.
  • Add maple syrup, cinnamon, and pinch of salt. Remove from heat.
  • Stir in chia seeds and transfer to glass jar.
  • Let cool slightly, then refrigerate for at least 1 hour to chill.
  • If jam hasn’t thickened enough, stir in 1 to 2 more teaspoons chia seeds and let sit for another 10 to 15 minutes.
