Ingredients
For the dry ingredients:
4.2 oz (120 g) all-purpose flour
2 tbsp coconut sugar
1 tbsp baking powder
½ tsp cinnamon

Instructions
- In bowl, mix all dry ingredients and ¼ teaspoon salt. Add milk and vanilla. Stir until just combined.
- Heat 1 teaspoon extra virgin olive oil in pan over medium heat.
- Pour 4 tablespoons batter per pancake into pan. Cook for 2 to 3 minutes, or until bubbles form on surface and edges begin to dry.
- Flip and cook for another 2 to 3 minutes until golden brown and cooked through.
