Kale Salad with Avocado Dressing

Ingredients

For the salad:
  14 oz (400 g) kale
  6.3 oz (180 g) pomegranate seeds
  1 clove garlic, minced
For the dressing:
  1 ripe avocado
  6 tbsp Greek yogurt
  1 ½ tbsp lime juice
  2 tbsp fresh cilantro, chopped

Instructions

  • To make dressing, scoop avocado flesh into blender and add remaining dressing ingredients. Season with salt. Blend until smooth and creamy. Add water, 1 tablespoon at a time, to adjust consistency. Transfer to jar and refrigerate until ready to use.
  • Remove tough stems from kale and tear leaves into bite-sized pieces. Place in large bowl.
  • Add 1 tablespoon extra virgin olive oil, minced garlic, and pinch of salt. Massage kale for 2 to 3 minutes until softened.
  • Add pomegranate seeds and drizzle with dressing. Toss until well coated, then serve.
