Ingredients
2.6 oz (75 g) raw pistachio nuts
2.6 oz (75 g) raw cashews
10 medjool dates, pitted
2 oz (60 g) pumpkin purée
½ tsp pumpkin pie spice
½ tsp ground cinnamon
½ tsp vanilla extract
pinch of sea salt

Instructions
- Place half the pistachios in a food processor. Pulse until nuts reach coarse, sand-like texture. Transfer nuts to a small bowl and set aside.
- Add remaining pistachios and cashews to food processor. Process until finely ground. Add dates, pumpkin purée, salt, spices, and vanilla extract. Continue processing until ingredients are well combined and mixture is smooth.
- Using your hands, equally portion and roll mixture into nine golf ball-sized balls.
- Coat each ball by rolling in reserved pistachios.
- Enjoy immediately or store in the freezer for later.
