Ingredients

8 oz (230 g) self-raising flour
3.5 oz (100 g) sugar
1 scoop (40 g) vegan vanilla protein powder
10 fl oz (300 ml) almond milk
2 fl oz (60 ml) coconut oil, melted
5.3 oz (150 g) pistachios, roasted, de-shelled
1 oz (30 g) spinach

Instructions

  • Preheat the oven to 320°F (160°C). Line a loaf tin with baking paper.
  • In a large bowl, combine the self-raising flour, sugar, and protein powder.
  • Place the almond milk, melted coconut oil, pistachios, and spinach into a blender and blend until smooth.
  • Pour the wet mixture into the bowl with the dry ingredients and gently fold together until fully combined. Transfer the batter into the prepared loaf tin.
  • Place the tray into the oven and bake for about 35 minutes, or until a skewer inserted into the center comes out clean.
  • Remove the tin from the oven, place on a wire rack, and allow the loaf to cool completely.
