Ingredients
1 large carrot
1.7 oz (50 g) pecans
1.2 oz (35 g) coconut flakes
3.2 oz (90 g) rolled oats
5 medjool dates
4 tbsp cashew butter
2 tsp ground cinnamon
½ tsp ground nutmeg
6 tbsp shredded coconut, for rolling

Instructions
- Add the carrot into a food processor and blend until finely chopped. Transfer to a bowl.
- Add the pecans and coconut flakes to the food processor and pulse until the mixture has a sandy texture. Then add the oats and dates and process again.
- Now add the carrot back into the food processor, along with the remaining ingredients, and blend until a dough comes together.
- Shape the mixture into 16 even tablespoon-sized balls.
- Place the shredded coconut in a dish and roll each ball in the coconut to coat it.
- Store the balls in an airtight container in the refrigerator for up to 2 weeks.
