Baked Pear Porridge

1 pear, cored, sliced
2 tbsp maple syrup
1 tsp ground cinnamon
4 tbsp walnuts, chopped
4.2 oz (120 g) rolled oats
8 fl oz (240 ml) unsweetened almond milk

Instructions

  • Preheat the oven to 350°F (180°C).
  • Place the pear slices on a baking tray with a tablespoon of the maple syrup and half a teaspoon of the ground cinnamon. Toss to coat evenly, place the tray into the oven, and bake for 15 minutes until golden.
  • Remove the pear from the oven, add the walnuts to the tray, and bake for a further 5 minutes.
  • Meanwhile, make the porridge by placing the oats, almond milk, and remaining cinnamon and maple syrup in a pot. Place over a medium heat and cook the porridge for 5 to 6 minutes, stirring frequently, until smooth.
  • Once the pears are ready, place them on top of the porridge with the walnuts and serve.
