Roasted Strawberry & Cottage Cheese Bowl

8 strawberries, quartered
4 tbsp rolled oats
2 tbsp unsweetened shredded coconut
2 tsp maple syrup
pinch of ground cinnamon
7 oz (200 g) cottage cheese

Instructions
- Preheat the oven to 350°F (180°C). Line a baking sheet with baking paper.
- In a small bowl, combine the strawberries, oats, shredded coconut, maple syrup, and cinnamon. Toss together until well combined.
- Spread the berry mixture evenly over the baking sheet and bake in the hot oven for 30 minutes, stirring once halfway through. Remove the sheet from the oven, place on a wire rack, and allow the roasted berries to cool for 5 minutes.
- To serve, place the cottage cheese in a bowl and add the roasted berry mixture on top.
