3 large eggs
7.9 oz (225 g) cottage cheese
1 tbsp honey
1 tsp vanilla extract
2 oz (60 g) oat flour
1 tsp baking powder
1 tsp ground ginger
½ tsp ground nutmeg
½ tsp ground cinnamon
¼ tsp ground allspice
¼ tsp ground cloves
pinch of salt
1 tbsp chia seeds
1 tsp olive oil
2 tbsp Greek yogurt
1 orange, segmented
2 tsp maple syrup

Instructions

  • In a blender, combine the eggs, cottage cheese, honey, vanilla extract, oat flour, baking powder, ground spices, and salt. Blend until the mixture is well combined.
  • Pour the batter into a medium bowl and fold in the chia seeds.
  • Heat the olive oil in a large skillet over medium-high heat. Pour ¼ cup of the batter into the pan and cook for about 3 minutes, or until bubbles start to form on the surface and the edges become golden brown. Flip the pancake and cook for an additional 3 minutes, or until cooked through and golden. Repeat this process with the remaining batter.
  • Top the pancakes with Greek yogurt, orange segments, and drizzle with maple syrup to serve.
