Homemade Vanilla Granola

Ingredients

2 cups (180 g) rolled oats
1 cup (120 g) walnuts, chopped
1 cup (95 g) almonds, chopped
1 tsp ground cinnamon
4 tbsp coconut oil
⅓ cup (80 ml) maple syrup
1 tbsp vanilla extract

Instructions

  • Preheat oven to 300°F (150°C) and line baking tray with parchment paper.
  • Add oats, chopped nuts, and cinnamon to large bowl and mix well.
  • Melt coconut oil in microwave, then mix with maple syrup and vanilla extract.
  • Pour coconut oil mixture over dry ingredients and stir until everything is well coated. Transfer granola onto lined tray and spread out into single, even layer.
  • Place tray in oven and bake for 25 to 30 minutes, or until edges are just starting to brown.
  • Remove tray from oven and let granola cool completely before breaking it up.
