Spaghetti with Broccoli & Creamy Harissa Sauce

Ingredients
12 oz (340 g) dry spaghetti
2 tbsp olive oil
½ head broccoli, cut into small florets
3 cloves garlic, finely sliced
1 red chili, finely sliced
3 tbsp coconut yogurt
1 tbsp harissa paste
1 lemon, zested & juiced
pinch of salt & black pepper

Instructions
- Cook the spaghetti according to instructions on packaging. Drain the pasta and hold back a little pasta cooking water.
- Set a large skillet over high heat and add the olive oil. Toss in the broccoli florets and sauté for about 5 minutes until they start to soften slightly. Then add the garlic and chili to the pan and sauté for a further 30 seconds until fragrant.
- Add the coconut yogurt, harissa paste, lemon zest, and lemon juice, along with a splash of the reserved pasta cooking water to achieve the desired consistency of sauce.
- Now add the cooked spaghetti to the pan and stir well to ensure everything is evenly coated with the creamy harissa sauce. Season the dish to taste with salt and pepper and serve.
- Add additional sliced chili for garnish if desired.
