Ingredients

For the avocado:
  1 avocado
  2 tbsp basil, chopped
  1 garlic clove, peeled
  1 tbsp tahini
  juice of half lemon
  1 tbsp olive oil
  2 tbsp water
  pinch of salt
For the mushrooms:
  ½ tsp olive oil
  8.8 oz (250 g) mushrooms
  2 tbsp pine nuts
  3 garlic cloves, minced
  pinch of salt
  2 slices bread, toasted
  1 tbsp fresh basil leaves, chopped
  pinch of black pepper
  juice of 1 lemon

Instructions

  • Start by placing all the ingredients for the avocado into a blender or food processor. Pulse until they are broken down but still retain a slightly chunky texture.
  • Heat a large skillet over medium heat and add the olive oil. Once the oil is warm, toss in the mushrooms, pine nuts, minced garlic, and a pinch of salt. Cook for approximately 5-10 minutes until the mushrooms become soft and tender.
  • While the mushrooms are cooking, toast the slices of bread until they are lightly browned.
  • Once the toast is ready, spoon some of the avocado mixture onto each slice, spreading it evenly with a spoon.
  • Top the avocado toast with the cooked mushrooms from the pan, followed by a scattering of fresh basil leaves, a pinch of black pepper, and a squeeze of lemon juice.
