Instructions
- Start by placing all the ingredients for the avocado into a blender or food processor. Pulse until they are broken down but still retain a slightly chunky texture.
- Heat a large skillet over medium heat and add the olive oil. Once the oil is warm, toss in the mushrooms, pine nuts, minced garlic, and a pinch of salt. Cook for approximately 5-10 minutes until the mushrooms become soft and tender.
- While the mushrooms are cooking, toast the slices of bread until they are lightly browned.
- Once the toast is ready, spoon some of the avocado mixture onto each slice, spreading it evenly with a spoon.
- Top the avocado toast with the cooked mushrooms from the pan, followed by a scattering of fresh basil leaves, a pinch of black pepper, and a squeeze of lemon juice.
