Crispy Baked Zucchini

5 zucchinis, sliced into ⅓ inch thick disks
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
1 tsp garlic powder
¼ tsp red pepper flakes
4 tbsp grated vegan parmesan cheese
8 basil leaves

Instructions

  • Preheat the oven to 425°F (220°C). Prepare a baking sheet lined with baking paper.
  • Slice the zucchinis into disks and place into a bowl. Add the olive oil, salt, black pepper, garlic powder, and red pepper flakes. Place in a single layer on the baking sheet and sprinkle each slice with some grated parmesan.
  • Place the baking sheet into the hot oven and bake for 15-18 minutes, then cover with foil to stop the zucchini from browning too much. Continue to bake for 5-7 minutes until fork tender and the zucchini is golden and crispy.
  • Place the zucchini on a platter and scatter over the torn basil leaves to serve.
