Golden Tofu & Veggie Scramble

Ingredients

1 tbsp olive oil
¼ of an onion, diced
2 garlic cloves, chopped
10.6 oz (300 g) chopped mixed vegetables (e.g., mushroom, carrot, asparagus)
8 oz (225 g) tofu, crumbled
salt & pepper, to taste
½ tsp ground turmeric
splash of tamari sauce
2 tsp nutritional yeast

Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, and vegetables and sauté until tender.
  • Once the vegetables are just tender, reduce the heat to medium and make a well in the center of the skillet. Add the tofu and sauté till a golden crust forms. Season the tofu with salt, pepper, and turmeric. When the tofu is starting to turn crispy around the edges, mix it in with the vegetables. Add a splash of tamari sauce to taste and nutritional yeast.
  • To serve, divide the mixture equally between 2 bowls and top with sliced avocado, green onions, and micro greens.
