Ingredients

6.3 oz (180 g) whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp garlic powder
1 tsp onion powder
7 oz (200 g) finely chopped broccoli
4 oz (115 g) shredded cheddar cheese
6 fl oz (180 ml) milk
4.4 oz (125 g) ricotta cheese
2 eggs
6 tbsp extra virgin olive oil

Instructions

  • Preheat oven to 425°F (220°C). Line 12-hole muffin pan with liner of choice.
  • In medium bowl, combine flour, baking powder, baking soda, garlic powder, and onion powder. Add broccoli and 3 oz (90 g) of cheddar cheese. Toss to coat.
  • In separate bowl, combine milk, ricotta cheese, eggs, and olive oil. Pour into flour mixture and stir until combined.
  • Fill each muffin cup about ⅔ full with batter. Sprinkle remaining cheddar cheese on top.
  • Bake for 15 minutes or until toothpick inserted comes out clean.
  • Enjoy once muffins cool or store in an airtight container for 3 to 4 days.
