Homemade Pecan Energy Bar

Ingredients
8.9 oz (250 g) medjool dates, pitted
4 oz (115 g) pecans, halves
1.6 oz (45 g) rolled oats
1 tbsp chia seeds
1 tsp vanilla extract
½ tsp ground cinnamon
¼ tsp salt

Instructions
- Preheat the oven to 200°F (90°C). Line a baking sheet with baking paper.
- Place the dates in a food processor and pulse until chopped and a rough texture forms. Add the remaining ingredients and process for a minute to form a crumbly dough.
- Place the dough onto the baking sheet and roll out into a 6 x 10.5 in (15 x 25 cm) rectangle. Cut the dough into 12 even-sized bars.
- Bake the bars in the hot oven for 30 minutes to dry them out a little. Then remove from the oven and set on a wire rack to cook to room temperature before enjoying.
- Store the bars in an airtight container in the refrigerator for up to 1 month.
