High-Protein Polenta Base BBQ Pizza

For the base:
1 cup (250 g) polenta
1 ¾ cup (420 ml) chicken broth (stock)
½ cup (120 ml) water
4 tbsp parmesan, grated

3 oz (90 g) mozzarella, grated
1 cup (30 g) baby spinach
10.5 oz (300 g) ground (minced) turkey, cooked
½ cup (120 ml) barbecue sauce (store-bought or homemade)
1 red onion, sliced
salt and pepper, to taste

Instructions
- Preheat oven to 400°F (200°C).
- Place chicken broth and water in small pot over medium heat and bring to a simmer. Very slowly add polenta, mixing well. Let simmer for 1 to 2 minutes, or until thickened. Mix in parmesan cheese and remove from heat.
- Line baking tray with parchment paper. Spread polenta out to form pizza base. Bake for 12 minutes.
- Season ground turkey with salt and pepper. Cook on dry nonstick pan over medium-high heat. Once cooked through, set aside.
- Remove pizza base from oven. Spread barbecue sauce over base, then top with cooked turkey, spinach, red onion, and mozzarella.
- Return pizza to oven and cook for 10 minutes, or until cheese has melted and is slightly golden.
