Spicy Chicken & Chickpeas

Ingredients
1 tbsp extra virgin olive oil
1 lb (450 g) chicken breast, chopped
1 tsp chili flakes
1 cup (170 g) chickpeas, rinsed
2 garlic cloves, minced
1 tbsp lemon juice
2 green onions (spring onions), sliced
2 tbsp fresh parsley, chopped
salt and pepper, to taste

Instructions
- Heat olive oil in nonstick skillet over medium-high heat. Season chicken with salt, pepper, and chili flakes. Cook for 5 to 6 minutes until chicken is cooked through.
- Add in chickpeas, garlic, and green onions. Cook for another 3 to 4 minutes.
- Take pan off heat. Drizzle with lemon juice, top with chopped parsley, and serve.
- If desired, serve with white rice, hummus, and fresh salad.
