Ingredients

2 cups (150 g) mixed lettuce
1 cup (200 g) cooked brown rice
1 cup (115 g) frozen sweetcorn, thawed
1 cup (150 g) cherry tomatoes
½ avocado
1 lime
1 cup (250 g) salsa of choice
1 cup (170 g) canned black beans, drained, rinsed
chopped coriander, for garnish (optional)

Instructions

  • Cook rice according to package instructions.
  • Chop mixed lettuce and divide between two large bowls.
  • Add ½ cup of cooked rice, sweetcorn, cherry tomatoes, salsa, and black beans to each bowl.
  • Cut avocado in half, then into quarters. Place slices on top of each bowl.
  • Serve bowls with lime wedges and garnish with chopped coriander for added flavor.
