Cheeseburger Omelet

Ingredients
2 eggs
4 egg whites
4 oz (115 g) 5% lean ground minced beef
1 tomato, sliced
1/4 cup (30 g) cheddar cheese
2 dill pickles (gherkins), sliced
2 tbsp tomato ketchup
salt and pepper, to taste

Instructions
- In bowl, whisk together eggs and egg whites. Heat dry nonstick skillet over medium heat.
- Add eggs to skillet and cover. Cook for 5 to 6 minutes, or until eggs are done to your liking, then remove from heat.
- Heat another skillet over medium-high heat and cook ground beef. Season with salt and pepper. Once cooked through, spread beef over eggs in other skillet.
- Place skillet back over heat. Top eggs and beef with sliced tomato and pickle. Fold, sprinkle with cheese, and cook until cheese has melted.
- Serve immediately with ketchup.
