Broccoli Cheddar Quiche

Ingredients
1 store bought shortcrust pastry crust (11 oz /320 g)
1 tbsp unsalted butter
8 oz (225 g) broccoli florets, chopped
1 small onion, diced
2 garlic cloves, minced
4 large eggs
6 fl oz (180 ml) milk
4 fl oz (120 ml) cream
½ tsp dried oregano
1 tsp salt
fresh ground black pepper
3 oz (90 g) shredded cheddar cheese
1 oz (30 g) shredded Parmesan cheese

Instructions
- Pre-bake the shortcrust pastry according to instructions on packaging. When finished, set the oven to 350°F (180°C).
- Meanwhile, place the butter in a skillet over medium heat. Add the broccoli, onion, garlic, and ¼ teaspoon of salt. Sauté for 5 minutes, then remove from the heat and set aside.
- In a medium bowl, whisk together the eggs, milk, cream, and oregano before seasoning with salt and pepper. Place the cheddar cheese and Parmesan cheese in the bottom of the pastry crust, along with the broccoli mixture. Pour the egg mixture over the top.
- Place the quiche into the oven and bake for 35-40 minutes, until the center is set and the top is lightly browned.
- Remove from the oven and serve warm or cold.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
