1 tbsp olive oil
salt & pepper, to taste
For the chimichurri butter:
  4 tbsp plant based butter, at room temperature
  2 tbsp chimichurri sauce

Instructions

  • Preheat the grill to medium.
  • Place the butter and chimichurri sauce into a small bowl. Stir to combine, and set aside.
  • Rub the corn with olive oil, then season with salt and pepper to taste. Place the corn under the hot grill for 10-12 minutes, turning regularly to prevent the corn from burning and ensuring it cooks evenly.
  • Serve the corn topped with the chimichurri butter.
