For the chimichurri butter:
4 tbsp plant based butter, at room temperature
2 tbsp chimichurri sauce
4 tbsp plant based butter, at room temperature
2 tbsp chimichurri sauce

Instructions
- Preheat the grill to medium.
- Place the butter and chimichurri sauce into a small bowl. Stir to combine, and set aside.
- Rub the corn with olive oil, then season with salt and pepper to taste. Place the corn under the hot grill for 10-12 minutes, turning regularly to prevent the corn from burning and ensuring it cooks evenly.
- Serve the corn topped with the chimichurri butter.
