Ingredients

1 tbsp olive oil
1 large yellow onion, chopped
salt & pepper
3 cloves garlic, minced
1 tbsp rosemary, finely chopped
1 tsp thyme leaves, chopped
2 lbs (900 g) ground turkey
2.8 oz (80 g) breadcrumbs
4.2 fl oz (120 ml) milk
2 tbsp Worcestershire sauce
1 egg
2.8 oz (80 g) tomato ketchup
2 tbsp coconut sugar

Instructions

  • Preheat the oven to 325°F (160°C). Lightly grease a large deep baking dish with cooking spray.
  • Heat the olive oil in a large skillet over a medium heat, add the onion and cook for 5 minutes until soft. Season with salt and pepper, then stir in the garlic and herbs. Cook for 1 minute until fragrant, then remove from heat and set aside to cool slightly.
  • Mix the ground turkey, breadcrumbs, milk, Worcestershire sauce, egg, and cooked vegetables together in a large bowl until well combined. Season with salt and pepper.
  • Add the turkey mixture to the prepared baking dish, and form the meat mixture into a loaf shape. Add the tomato ketchup and coconut sugar to a small bowl, mix to combine, and brush over the loaf. Place the dish into the hot oven and bake for around 1 hour and 20 minutes, until the meatloaf reaches an internal temperature of 160°F (71°C).
