Ingredients

1 large head cauliflower, stem trimmed
1 tbsp olive oil
salt & black pepper
4 tbsp cilantro, chopped
1 small shallot, finely diced
1 small clove garlic, minced
1 tbsp coconut sugar
1 tbsp tamari
½ tsp red pepper flakes
juice & zest of 1 lime
1 oz (30 g) salted peanuts, chopped

Instructions

  • Heat the oven broiler/grill to medium.
  • Place the cauliflower stem-side down on a cutting board and cut into 1" (2.5 cm) thick “steaks.” Rub olive oil over the steaks and season both sides with salt and pepper, and lay onto a baking sheet.
  • Grill the cauliflower for 8 minutes on each side, until tender and lightly browned.
  • Meanwhile, place the cilantro, shallot, garlic, coconut sugar, tamari, red pepper flakes, lime juice and zest, into a small bowl and stir to combine.
  • Transfer the grilled cauliflower to a platter, spoon over the sauce, and sprinkle with chopped peanuts.
