Roasted Za'atar Veggie Flatbread

Ingredients
½ red bell pepper
½ red onion
½ medium zucchini
8 green beans
1 tsp za’atar seasoning (or sub Greek seasoning)
1 tsp olive oil
¾ cup (40 g) cooked chickpeas
6 mini whole wheat flatbread (or sub naan)
6 tbsp hummus (or sub white bean dip)
drizzle of balsamic glaze (optional)

Instructions
- Preheat oven to 400°F (200°C). Slice zucchini, onions, and red bell pepper into long strips. Cut ends of green beans, then slice in half.
- Toss vegetables and chickpeas onto baking tray lined with parchment paper. Drizzle olive oil and za’atar seasoning. Place in oven and bake for 15 minutes, or until the vegetable edges have browned slightly.
- Once vegetables have cooked, toast flatbread. Spread 1 tablespoon hummus onto each piece and top with roasted chickpea and vegetable mixture. Drizzle balsamic glaze (optional).
