Breakfast Baked Apples

Ingredients
5.6 oz (160 g) rolled oats
1.5 pt (720 ml) water
2 tbsp maple syrup
1 tbsp ground cinnamon
4 large apples, hollowed out with tops sliced off
1 tbsp coconut oil, melted
1 tbsp coconut sugar
1 tsp ground cinnamon, plus extra to sprinkle
2 tbsp dried cranberries
2 tbsp chopped pecans

Instructions
- Preheat oven to 400°F (200°C).
- In medium saucepan over medium-low heat, combine rolled oats and water. Cook, stirring occasionally, until oats become creamy. Stir in maple syrup and ground cinnamon.
- Place hollowed apples in baking dish. Brush insides with coconut oil, then sprinkle with coconut sugar and a little cinnamon. Fill each apple with oatmeal mixture.
- Bake for 35 minutes, or until apples are tender.
- Serve warm, topped with cranberries and pecans.
