Detox Quinoa Salad

Ingredients
1 cup (185 g) cooked quinoa
¼ small red/purple cabbage
1 small head broccoli
3 leaves kale, stems removed
1 medium carrot
2 tbsp hemp seeds
2 tbsp sunflower seeds
¼ cup (30 g) raw pumpkin seeds
½ cup (65 g) dried cranberries
½ cup (120 ml) salad dressing of choice, or simple detox dressing
For the simple detox dressing (optional):
¼ cup (60 ml) apple cider vinegar
¼ cup (60 ml) extra virgin olive oil
1 garlic clove, peeled, bruised
½ tbsp maple syrup
salt and pepper, to taste

Instructions
- Chop broccoli into bite-sized pieces. Slice kale and purple cabbage into thin shreds. Peel and grate carrot. Place all prepared vegetables into large bowl and top with sunflower seeds, cooked quinoa, dried cranberries, hemp seeds, and pumpkin seeds.
- To make dressing, place all ingredients into small blender and blend until smooth (or substitute with store-bought dressing of choice).
- Pour dressing over salad and mix well to combine. Serve immediately, or store overnight in fridge for a quick grab-and-go lunch.
