Berry Arugula Salad

Ingredients

½ cup (90 g) quinoa
4 cups (120 g) arugula (or sub spinach)
½ cup (70 g) blackberries
¼ cup (45 g) blueberries
½ cup (65 g) raspberries
10 green beans
⅛ of small red onion
¼ cup (20 g) flaked almonds
2 tbsp balsamic dressing
1 ¼ cup (300 ml) water

Instructions

  • Place quinoa in saucepan with 1 cup water and season with salt and pepper. Bring to a boil, then reduce to a simmer. Cook gently for 15 minutes.
  • Place green beans in frying pan with ⅛ cup water and a little salt. Cook over medium heat for 4 minutes until they turn bright green. Once cooked, drain and blanch in ice-cold water. Dry off with clean towel and set aside.
  • Slice onion and cut raspberries and blackberries in half.
  • In two separate bowls, add arugula or spinach and top with cooked quinoa, berries, onion, flaked almonds, and green beans. Drizzle with balsamic dressing and serve immediately.
