Ingredients

1 tbsp. coconut oil
4 apples, peeled, cored & sliced
½ cup (120ml) cold water
1 tsp. cornstarch
3 tbsp. coconut sugar
1 tsp. ground cinnamon
¼ tsp. ground nutmeg
¼ tsp. ground ginger
1 tsp. vanilla extract

Instructions

  • In a medium pot, heat the coconut oil over medium heat, add the sliced apples and sauté for 6 minutes.
  • In a cup, mix together the cold water and cornstarch, and set aside.
  • Add the coconut sugar, cinnamon, nutmeg, ginger, vanilla extract and cornstarch/water mixture to the apples, stir to combine. Bring to a gentle boil and continue cooking for 8-10 minutes, stirring occasionally, until the apples are tender.
  • Serve the apples warm or cold.
