Cod in Curry Sauce with Green Beans

Ingredients

1 lb (450 g) skinless cod fillets
1 tbsp red curry paste
1 tbsp coconut oil
7 oz (200 ml) canned coconut milk
2 tsp tomato puree
1 tbsp fish sauce
1 tsp lime zest
5 oz (150 g) green beans
7 oz (200 g) uncooked rice
4 lime wedges, to serve
salt and pepper, to taste

Instructions

  • Cook rice according to package instructions.
  • Season cod with salt and pepper and rub half of red curry paste.
  • Heat coconut oil in large frying pan. Fry fish on both sides, then transfer onto plate.
  • Pour coconut milk into pan. Add remaining curry paste, tomato purée, fish sauce, and lime zest. Cook for 6 minutes.
  • Add green beans and cod into curry sauce and cook for 5 minutes.
  • Serve with rice and lime wedges.
