Baked Banana Berry Oats

Ingredients

3 ripe bananas
1 ⅓ cup (120 g) quick oats
2 tbsp flaxseed
1 tsp cinnamon
1 tsp baking powder
1 ½ cup (360 ml) soy milk
1 cup (250 g) frozen raspberries
⅓ cup (50 g) chopped walnuts
2 tbsp avocado oil

Instructions

  • Preheat oven to 350°F (180°C). Mash 2 bananas in bowl and mix in soy milk, flaxseed, and avocado oil. Mix well to combine.
  • Top mixture with oats, baking powder, and cinnamon. Mix well, then gently fold in raspberries and walnuts.
  • Line square 8 x 8-inch (20 x 20 cm) baking tin with parchment paper. Pour mixture in and spread evenly. Slice remaining banana into long thin strips and place on top. Put in oven and bake for 30 minutes.
  • Let cool, cut into bars, and store in fridge for a quick grab-and-go breakfast.
