Peach Blueberry Muffins

Ingredients
1 tsp coconut oil
3 peaches, diced
2 cups (300 g) fresh blueberries
1 cup (85 g) slivered almonds
2 cups (480 ml) almond milk
1 cup (80 g) rolled oats
½ cup (170 g) honey
4 tbsp coconut sugar
½ cup (110 g) egg whites
2 eggs
1 tsp vanilla extract

Instructions
- Preheat oven to 350°F (180°C). Lightly grease a muffin tin (one that makes 6 large muffins) with coconut oil.
- Place diced peaches with all remaining ingredients in a large mixing bowl and stir until well combined.
- Divide batter equally between muffin cups and place the tray into the oven. Bake muffins for 35 to 40 minutes, or until tops are lightly browned and a toothpick inserted into the center comes out clean.
- Set muffins on a wire rack to cool before serving.
