Banana & Coconut Pancakes

Ingredients

¾ cup (70 g) all-purpose flour
½ cup (65 g) coconut flour
1 ½ tbsp coconut sugar
2 ½ tsp baking powder
1 tsp salt
1 egg, beaten
1 ½ cups (300 ml) carton coconut milk
1 tbsp coconut oil, melted + 1 tbsp for cooking
1 tsp vanilla extract
1 banana, diced
⅔ cup (55 g) shredded coconut

Instructions

  • Place both flours, sugar, baking powder, and salt into mixing bowl and mix well. Add egg, milk, coconut oil, and vanilla extract, stirring until combined. Add in diced banana and shredded coconut and mix again.
  • Heat ¼ tablespoon coconut oil in non-stick pan over medium heat.
  • Scoop ¼ cup batter onto hot pan and cook for 3 to 4 minutes, or until bubbles start to appear. Carefully flip pancake and cook for another 2 to 3 minutes. Remove from pan. Repeat until all batter has been used.
  • Serve with toppings of your choice.
