High Protein Breakfast Burrito

8 eggs
1 tbsp milk of choice
4 slices bacon
1 tbsp extra virgin olive oil
1 tbsp garlic, minced
1 red bell pepper, finely chopped
1 red onion, finely chopped
4 tortillas, wheat or corn

Instructions

  • In bowl, whisk eggs and milk, season with salt and pepper, then set aside.
  • Heat dry non-stick pan over medium-high heat and cook bacon until crispy. Remove from pan and set aside.
  • Add garlic to hot pan and cook for 30 seconds until fragrant, being careful not to burn. Add in chopped pepper and onion and sauté for 2 to 3 minutes until softened, then set aside.
  • In same pan, fry eggs for 3 to 5 minutes until cooked but still soft.
  • Divide bacon, vegetable mixture, and eggs equally between four tortillas and wrap tightly. Place wraps onto grill pan set to medium. Toast on both sides until browned.
  • Serve either hot or cold.
