Yogurt with Oats, Mixed Seeds, & Ginger Syrup

Ingredients

For the yogurt:
  4 tbsp oats
  1 ¼ cup (315 g) Greek yogurt
  2 tbsp sunflower seeds
  2 tbsp pumpkin seeds
  1 tsp poppy seeds
  1 tbsp chia seeds
  1 peach, sliced
For the syrup:
  ¼ cup (60 ml) water
  4 tbsp honey
  2 tbsp ginger, sliced

Instructions

  • Combine yogurt with oats. Cover and refrigerate overnight, or at least 1 hour. Mix all seeds in small bowl and set aside until ready to serve.
  • Combine all syrup ingredients in small saucepan and bring to a boil. Reduce heat and simmer for 10 minutes, until slightly thickened, then strain ginger.
  • To serve, divide yogurt between four bowls and top with seed mixture, sliced peach, and syrup.
