Ingredients

2 slices whole wheat bread
¼ cup (20g) vegan cheese, grated
¼ cup (25 g) artichokes, drained, chopped
1 cup mushrooms, sliced
1 clove garlic, minced
1 tbsp vegan butter
2 tbsp pine nuts, toasted

Instructions

  • Heat oven to 350°F (180°C). Line baking sheet with baking paper.
  • Place slices of bread on baking tray, top with cheese, and toast in oven for 8 to 10 minutes.
  • Heat butter in pot over medium-high heat and cook garlic for 1 minute until fragrant. Add mushrooms to pot and cook for 3 to 4 minutes. Add artichokes and cook for 1 to 2 minutes until heated through.
  • Check toast; once cheese has melted, take out tray and divide between 2 plates. Top each slice with vegetable mixture and sprinkle pine nuts to garnish. Serve immediately.
