Ingredients

8 oz. (225g) chickpeas, drained
3 tbsp. hummus
2 tbsp. almond milk, unsweetened
1 tbsp. lemon juice
½ tbsp. curry powder
1 tsp. maple syrup
¼ tsp. salt
¼ red onion, diced
4 slices whole-wheat bread
2 tbsp. cilantro, chopped

Instructions

  • Place the chickpeas in a bowl and mash with a fork. Now add the hummus, almond milk, lemon juice, curry powder, maple syrup and salt and mix well to combine. Add in the chopped onion and stir again.
  • Meanwhile, toast the bread, then top the toast with the chickpea mixture and garnish with freshly chopped cilantro.
