Chicken & Plum Stir Fry with Bok Choy & Noodles

Ingredients
8.5 oz (230 g) instant ramen noodles
4 plums, destones, chopped into wedges
1.2 lbs (560 g) chicken thighs, diced
1 tbsp coconut oil
2 tsp coconut sugar
2 cloves garlic, minced
1 tbsp root ginger, minced
4 green onions, sliced
1 tsp chili flakes
2 bok choy, trimmed, sliced
2 tbsp hoisin sauce
2 tbsp sweet soy sauce
½ cup (120 ml) water
⅓ cup (50 g) roasted peanuts
salt and pepper, to taste

Instructions
- Cook noodles according to package instructions. Drain and run under cold water to prevent sticking. Set aside.
- Heat coconut oil in large skillet or wok over medium-high heat. Add chicken and season with salt and pepper. Fry for4 to 5 minutes, stirring occasionally until browned.
- Lower heat to medium and add plums and sugar. Cook for 1 to 2 minutes. Add garlic, ginger, chili flakes, and half the green onions. Cook for additional 1 to 2 minutes.
- Add bok choy and cook for 1 to 2 minutes or until soft. Stir in hoisin sauce, sweet soy sauce, and water. Add noodles and cook for 1 to 2 minutes or until hot.
- Divide into 4 bowls. Scatter peanuts and remaining green onion to serve.
