Greek Tofu Bowl

Ingredients

½ small onion
½ red bell pepper
5 sun-dried tomatoes, rehydrated in boiling water
6 kalamata olives
½ tbsp olive or avocado oil
¼ cup (12 g) chopped parsley
14 oz (400 g) pack extra firm tofu, drained, pressed
1 ½ tbsp Greek seasoning
½ lemon (juiced)
2 cups (60 g) mixed greens
salt and pepper, to taste

Instructions

  • Chop pepper and onion. Slice olives and sun-dried tomatoes. Set aside.
  • Pour oil into frying pan over medium heat. Crumble tofu into pan, then add Greek seasoning, parsley, red bell pepper, onion, olives, lemon juice, and sun-dried tomatoes. Stir well and cook for 3 minutes. Season to taste with salt and pepper, adding more Greek seasoning if desired.
  • Place cup of mixed greens and half of Greek tofu into each bowl. Serve immediately.
