Vegan Banana Muffins

14 oz. (400g) peeled bananas
½ cup (120ml) maple syrup
½ cup (125g) peanut butter
1 cup (120g) all-purpose flour
1½ tsp. baking powder
½ tsp. baking soda
¼ tsp fine sea salt

Instructions
- Preheat the oven to 355°F (180°C). Line a muffin tray with muffin cases.
- Place the bananas into a food processor to blend until smooth. Alternatively mash the bananas with a fork.
- Add the maple syrup and peanut butter and blend again to combine. Finally add in flour, baking powder, baking soda and salt and stir to form a cake batter.
- Divide the batter equally between 12 muffin cases. Then place the muffin tray in the hot oven and bake for 20 minutes, or until a toothpick inserted into the middle comes out clean.
- Remove the tray from the oven, then remove the muffins from the tray onto a wire rack and allow to cool completely before serving.
