Ingredients

1 cup (140g) cashews
½ cup (120g) coconut yogurt, natural
½ cup (130g) store bought salsa of choice
2 tbsp. water
1 tsp. ground cumin
½ tsp. chili powder
1 tsp. smoked paprika
2 tbsp. nutritional yeast
2 tbsp. jalapeños, pickled, drained
2 tbsp. pickled jalapeño brine from jar
salt & pepper

Instructions

  • Place the cashews into a small pot, cover with water and bring to a boil. Boil on high for 5 minutes, then drain the cashews and place them into a high-speed blender or food processor. Alternatively, soak the cashews in water overnight.
  • Add the rest of the ingredients to the blender, season with salt and pepper and blend until smooth and creamy.
