Fig toast:

Instructions
- Bring a pot of water to a boil and add the almonds. Cook for 1 minute, then drain and rinse with cold water. Squeeze each almond between your fingers to remove the skin.
- Next, place the almonds into a food processor or high speed blender along with the olive oil, lemon juice, water, nutritional yeast and salt. Blitz until smooth and creamy, then adjust the seasoning to taste.
- To serve, toast the bread, then spread the cream cheese over the toast and top with figs, thyme and a drizzle of maple syrup. Serve immediately.
