2 cups (280g) cashew nuts
4 tbsp. maple syrup
2 tbsp. sesame seeds
pinch salt

Instructions
- Preheat the oven to 375°F (190°C). Line a baking tray with baking paper.
- Place the cashew nuts onto the baking paper and drizzle with maple syrup. Toss the cashews in the syrup until well coated then sprinkle over the sesame seeds and season with salt. Toss again.
- Place the tray in the oven and roast for around 10 minutes, giving the tray a quick toss every 3 minutes. Once the cashews are golden brown, remove from the oven and set aside on a wire rack to cool completely. Store in an airtight container for up to 1 week.
