Harissa Butter Beans On Toast

Ingredients
1 tbsp. olive oil
2 cloves garlic, chopped
pinch salt
1x 14 oz. (400g) can butter beans, drained
2 tbsp. plant-based yogurt
2 tsp. harissa paste
1 lime, juiced
2 slices bread, toasted
1 tbsp. fresh parsley, chopped

Instructions
- Heat the olive oil in a pot over a medium heat. Add the garlic and a pinch of salt, cook for 3 minutes.
- Now add the butter beans and cook gently for 5 minutes. Stir in the yogurt, harissa paste and lime juice. Mix well and cook for a further 5 minutes. Meanwhile, toast the bread.
- To serve, spoon the beans over the toasted bread and sprinkle with chopped parsley.
