7 oz (200 g) spinach
7 oz (200 g) walnuts
1 oz (30 g) fresh basil
3.5 oz (100 g) frozen peas, defrosted
2 tbsp nutritional yeast

Instructions

  • Add all ingredients, plus 6 tablespoons extra virgin olive oil to food processor or blender. Season with generous pinch of salt.
  • Pulse for 10 to 15 seconds, until evenly combined.
  • For smoother pesto, continue blending and add more extra virgin olive oil as needed.
  • Taste and adjust seasoning, if desired.
  • If not using immediately, transfer pesto to jar, seal it, and refrigerate for up to 5 days.
