Chickpea Sweet Potato Boats

2 sweet potatoes, washed, patted dry
1 can (14 oz / 400 g) chickpeas, drained, rinsed
1 tsp paprika
8 tbsp marinara sauce
1 tbsp chives, chopped

Instructions

  • Preheat oven to 375°F (190°C).
  • Slice sweet potatoes in half lengthwise and brush cut sides with 1 tablespoon extra virgin olive oil. Place potatoes cut-side up on baking sheet.
  • Bake for 30 minutes, or until flesh is soft when pierced with knife.
  • Meanwhile, spread chickpeas on separate baking sheet. Sprinkle 1 teaspoon salt and paprika.
  • Bake chickpeas for 10 minutes, until lightly golden.
  • Remove both trays from oven. Spoon marinara sauce over sweet potato halves, then top with roasted chickpeas.
  • Garnish with chives and serve warm.
