Mango Chia Bliss Pudding

Ingredients
8.4 fl oz (250 ml) unsweetened almond milk
4 tbsp chia seeds
1 ½ tbsp maple syrup
½ tsp vanilla extract
4.9 oz (140 g) fresh or frozen mango chunks

Instructions
- Add milk to mixing bowl. Whisk in chia seeds, maple syrup, and vanilla extract until fully combined and free of clumps.
- Let mixture rest for 10 minutes, then whisk again to break up remaining clumps.
- Refrigerate for at least 30 minutes, or up to overnight, until thickened.
- When ready to assemble, blend mango until smooth using blender or immersion blender, or, mash mango with fork or finely dice. Set some mango aside for topping. Mix remaining mango into chia pudding.
- Divide pudding into two serving cups and top with remaining mango. Serve immediately, or refrigerate for up to 3 days.
