Chili Lime Chicken with Fiery Sweet Potatoes

Ingredients
18 oz (500 g) sweet potatoes, peeled, chopped
1 broccoli, cut into florets
8.8 oz (250 g) boneless, skinless chicken breasts
1 lime, zested, juiced
1 chili pepper, deseeded, diced
1 tsp honey
1 tsp butter
2 tbsp fresh ginger, grated
0.25 oz (7 g) fresh cilantro, chopped

Instructions
- Cook sweet potatoes in salted boiling water for 12 to 15 minutes, until tender.
- Cook broccoli in salted boiling water for 5 to 6 minutes until just tender, then drain.
- Heat 2 tablespoons extra virgin olive oil in large pan over medium heat. Add chicken breasts and cook for about 10 minutes per side, until golden and cooked through.
- In small bowl, mix 2 tablespoons lime juice with 1 teaspoon lime zest, chili pepper, and honey. Season with salt and black pepper.
- Pour chili-lime mixture over chicken and sauté for 1 minute, turning to coat evenly. Remove from heat.
- Drain sweet potatoes, reserving a small amount of cooking water in pot. Add butter and ginger to potatoes in pot, mash until smooth, and season with salt and black pepper.
- Serve chicken with mashed sweet potatoes and broccoli. Garnish with chopped cilantro.
