One-Pot Beans, Greens, & Grains

Ingredients
6 oz (170 g) quinoa, rinsed
1 x 14 oz (400 g) can white beans, drained, rinsed
1 small clove garlic, finely grated
7 oz (200 g) spinach
1 lemon, to zest and garnish

Instructions
- Cook quinoa according to package instructions.
- Meanwhile, in small bowl, combine beans, garlic, 2 tablespoons extra virgin olive oil, and pinch of salt and pepper. Stir to coat. Set aside.
- Add spinach to quinoa during last 5 minutes of cooking to wilt.
- Remove from heat. Spoon bean mixture over spinach. Cover and let sit for 5 minutes.
- Grate lemon zest over beans and greens. Cut lemon into wedges to garnish. Serve with squeeze of lemon juice.
