Quick Pickled Red Onions

Ingredients

2 red onions, thinly sliced
½ cup (120ml) apple cider vinegar
½ cup (120ml) water
¾ tsp. salt
2 tbsp. honey
2 tsp. ground cumin
1 clove garlic, cut in half
2 bay leaves

Instructions

  • Place the onion in a small pot along with the vinegar, water,salt, honey and cumin. Place the pot on the stove over a medium heat and bring to a simmer. Stirring the mixture, simmer for 1 minute then remove from the stove and set aside to cool.
  • Place the onions and liquid into a jar, add in the garlic and bay leaves and fit with a lid. Store the pickles in the refrigerator for up to 2 weeks.
